Dandelion

Taraxacum officinale is a highly underrated medicinal plant and food source, erroneously labeled as a “weed.” The entire plant is edible - the roots can be roasted and made into a drink reminiscent of coffee (but without the caffeine), the leaves can be added to soups and salads, and the flowers can be made into fritters, wine, or jellies and syrups that taste just like honey.
